For foodies, coming up with a quick and easy dessert shouldn’t be a problem. After all, you really only need to pop open a box of Girl Guide cookies and voila!
Of course, when you have company, you need to come up with something a little more tangible. Steve actually had this brainstorm when he decided to make pancakes one weekend morning. A household standard was born!
There’s nothing unique or creative about this, but sometimes even the simplest recipes are overlooked in our never ending quest for originality. This is really just a simple whipped cream dessert. It doesn’t need to be a topping; you can spoon this out into ramekins just as it is. You can skip the chocolate (gasp!) and just make it a light chantilly. Or you can serve it — either version — on top of fresh berries for an amazing summer treat.
Oh, and as an added bonus, we use Truvia to keep the sugar content low. It’s still rich and decadent (and fairly high calorie if you eat it all yourself), but at least it’s not loaded with sugar.
Here we go:
Quick Chocolate Mousse
- 1 cup whipping cream
- 1 tbsp Truvia (<== affiliate link right there)
- 1/2 tsp vanilla extract
- 2 tbsp cocoa powder
Place all ingredients into a bowl, and stir gently with a whisk until the dry ingredients are incorporated and smooth. Then whip until it forms a stiff peak. Serve chilled, individually in ramekins or use it to top something fancier (like a cake or pie). We also like it with berries, or dusted with shaved chocolate if you want to make it look fancier.
There. That wasn’t too difficult, was it? If your whisking arm is on the fritz, feel free to use an electric hand or stand mixer. We’ve just found that the time it takes to set all of that up and clean it is about the same as the time it takes to just whip it by hand.
You can also adjust to taste by using less cocoa, or substituting lemon extract, or by using half a cup of cream as your base (for just two of you). Feel free to modify and play with it as needed!
